Chicken Enchiladas: Kelsie Style

Today I was struggling with what I wanted to make for dinner. I looked through my fridge and saw that I had some chicken, so I thought: Bingo! I'll make enchiladas. I've never made enchiladas before, but I know the basic ingredients, but I added a little twist that is SO GOOD! You must try these enchiladas. Here's my recipe, and mind you, I only feed myself so you can expand the recipe as you wish. I made 3 enchiladas out of it:
-3 whole wheat tortillas (extra healthy! :))
-1 10 oz can of green enchilada sauce
-3 oz cream cheese
-1 chicken breast
-1 tsp lemon juice
-1/2 cup shredded cheese

Preheat the oven to 350 degrees. Boil the chicken until cooked. In a saucepan combine the cream cheese, lemon juice, and about 3/4 enchilada sauce until warm. When chicken is cooked, shred it. Combine the cream cheese/lemon juice/enchilada sauce mixture with the chicken in a small bowl and add in half of the shredded cheese. Mix well. Scoop the chicken and sauce mixture evenly onto tortillas and place the enchiladas in an 8x10 inch glass pan. Pour the remaining enchilada sauce over the enchiladas and top with the remaining 1/4c of shredded cheese. Bake for 20 mins or until cheese is melted and tortillas are slightly crispy! Enjoy!!!
