It's The Time of Year To Be An Elf!

If y'all don't know, I LOVE the Movie Elf! I have a partial obsession with it. It just cracks me up every time. I have made it a tradition starting December 1st to count down to Christmas by posting an Elf quote as my facebook status each day. I did this last year as well, and it was A HIT! So, I started doing it again yesterday, and it was a success again! So tune in to my facebook statuses this month until Christmas if you want to hear some awesomely funny quotes! Yesterday's was "Have you seen these toilets?! They're GINORMOUS!" :) So great. !

Chicken Enchiladas: Kelsie Style

Today I was struggling with what I wanted to make for dinner. I looked through my fridge and saw that I had some chicken, so I thought: Bingo! I'll make enchiladas. I've never made enchiladas before, but I know the basic ingredients, but I added a little twist that is SO GOOD! You must try these enchiladas. Here's my recipe, and mind you, I only feed myself so you can expand the recipe as you wish. I made 3 enchiladas out of it:
-3 whole wheat tortillas (extra healthy! :))
-1 10 oz can of green enchilada sauce
-3 oz cream cheese
-1 chicken breast
-1 tsp lemon juice
-1/2 cup shredded cheese

Preheat the oven to 350 degrees. Boil the chicken until cooked. In a saucepan combine the cream cheese, lemon juice, and about 3/4 enchilada sauce until warm. When chicken is cooked, shred it. Combine the cream cheese/lemon juice/enchilada sauce mixture with the chicken in a small bowl and add in half of the shredded cheese. Mix well. Scoop the chicken and sauce mixture evenly onto tortillas and place the enchiladas in an 8x10 inch glass pan. Pour the remaining enchilada sauce over the enchiladas and top with the remaining 1/4c of shredded cheese. Bake for 20 mins or until cheese is melted and tortillas are slightly crispy! Enjoy!!!

I'm a Belieber.....

I recently bought a few songs off of Justin Bieber's new Christmas album. It's awesome! I've always been a fan of the Biebster, but this CD has brought my love to a new level. I personally like his song 'Drummer Boy' the best. But you can listen for yourself. Now go buy the CD in preparation for Christmas and you will be one of the happiest people alive :)

Dear Kenzie And Eliza: We May Or May Not Have Built A Fort In Here

 On Sunday, I was in my room studying, and my roommate Lindsay comes into my room and says, Quote: "I many or may not have started building a fort in the living room." And then walks out of my room. Laughing, I walk into our living room to see the beginnings of an AWESOME fort! We added more to it, using the kitchen table and chairs, 2 couches, as well as my bedding and Lindsay's bedding, to create the most epic fort I've ever been in. College is great. Lindsay and I spent the next hour or so in the fort playing Justin Bieber's new Christmas CD until our other roommates came home to see our wonderful creation. Let's just say that this was one great fort and a great sabbath activity. I mean, if it's blog worthy then it must have been awesome. And here's Lindsay and I in our fort to give you a little taste :)

Second Round

I'm back at BYU for my sophomore year in college and I figured I should post on this thing. I'm not a very good blogger yet, time is just too valuable. BUT, I'm taking 8 classes: Basketball, Choir, Piano, Anatomy, Anatomy lab, Nutrition, New Testament, Survey of World Religions. 16.5 credits. I'm a busy woman. Anatomy is going to be the death of me. I love that class, but it is TONSSSSSS of work!
          My roommates are great, I'm rooming with 2 girls I knew in my hall last year, and another girl who I had never met before moving in. They're all great, and we have lots of fun together. There was supposed to be me and 3 of my close friends living with me in this apartment, but 2 went off and got married, so one is left here with me still, which is great :) So here are some pics: My two friends that got married, and then our roommate picture! Life is good :)

Distance makes the heart grow fonder!

What they say is true! Distance does make the heart grow fonder! I sent my best friend and boyfriend of 3 years off on a mission for The Church of Jesus Christ of Latter Day Saints a little more than a year ago. So, the reason for this post is that I have reached my 1 year marker (he's gone for 2 years), so I deserve to blog about it! I'm not really sure what else to say, except that I can't wait until next may when he comes back! I sure do love him! Here are some pictures of us before he left. Oh Charlotte...

Since I have returned from BYU, I have acquired a new job at a retail store called Charlotte Rousse. There are many pros to this job:
   1. 40% employee discount
   2. I actually have money
   3. Get experience working in retail
   4. Get new clothes
   5. Broadening my fashion sense





I would like to blog today specifically about the fab number 5. I see SOOOOOO many clothes at work since I'm there all the time, and I'm beginning to love love love clothes and I love putting outfits together. I was blog stalking my friend the other day, and I came across a site that I absolutely love. I was browsing this site and found TONS of cute dresses. Here are some of them that I would love to have. Any contributions to the closet of kelsie oberender from this site would be greatly appreciated! These are some of my favorites. I'm a pretty simple person and these dresses are so me. Finals

Finals are always dreadful. I spend the week before in classes and then when I'm done with class, I go study in the library for the rest of the night. Then it repeats until finals are over. I have 5 finals this semester, which is better than last semester. Last semester I have 6. The picture is of me in the library studying American Heritage. I'm so attractive, I know. This is what lack of sleep and reading for hours does to you. Peace!

A Little Thing Called Sunshine



On Monday in Tuesday it snowed, and today we have 60 degrees of sunshine! It's wonderful! I wore flip flops to school, and had a picnic outside with my friend Meghan. Living in California I took the sun for granted. I sure do love some sun on me! I can't wait till I'm done with school next month and can regain my tan so that I will no longer be white Utard. The grass is covered with people studying out in the sun. See for yourself!

My friend Kim and I, we sat next to each other at all the games. She's crazy like me too :)

As many of you know, I am an extreme byu basketball fanatic. I went to every single home game this season, waiting in line for hours to get a good seat. I even camped out once for 3 nights for one of the games and waited in line during a blizzard. I know I'm crazy, but you have to be when you have Jimmer Fredette and Jackson Emery on your team. Since the season is officially over with our loss to Florida at the Sweet Sixteen, I decided that Jimmer and Jax needed a dedicatory ode haha. These two have been the causes of many days of a lost voice, high blood pressure, sold out games, facebook statuses, anxiety, all-nighters, television interviews, catchy slogans, face-painting, screaming, love, and a whole season of dedication. I know everyone loves Jimmer, but because I go to school with him and see him around campus, I feel like I'm allowed a little more love than everyone else. The Marriott Center court was also rushed for the first time in history after our first win over SDSU at home! I love Jimmer because he is a great team player, and is simply amazing. There's even a "Teach Me How To Jimmer" song, and a song called "Amazing" written by his rapper brother T.J. Fredette. I even gave Jimmer a name of my own, and I'm going to say it on here one last time before he goes to the NBA: Jimmer Freaking Sexy Fredette! I also have a special love for Jackson Emery. When I played basketball in high school, my best attribute on the court was my defense, so I connected with Emery a lot and respected his defense and how quick he was. Lemme just say, he is the master. He broke Aigne's record for steals while Jimmer broke his record for points. The games when we would count down with how many steals Emery had left until he was the record holder were awesome. Each steal he would get, the crowd would go wild and we would hold up 3 fingers, then 2 fingers, and then 1 finger and then he did it! I'm not sure whether my favorite player is Jimmer or Emery, because they play different aspects of the game, but, when I'm married and have children, is is going to be named Emery James after these two boys in my life that made my freshman year amazing. This boy is also going to be an adopted black boy. You think I'm kidding, but if you know me well enough, you know I'm not kidding! I tried to upload some videos of our flashmob and of the seniors' speeches that I recorded, but the only video that wasn't taking forever to upload was the one of me waiting in line during the blizzard. It doesn't look like it was snowing hard, but trust me, it was! You can youtube the senior speeches and the flashmob if you want. They were awesome!

Festival of Colors













I'm not gonna lie, in Provo it's hard to find fun things to do sometimes, but then that makes it more fun because the things we do are quite random. So, in Spanish Fork they were holding a celebration at a Hindu Krishna Temple. The celebration was called the Festival of Colors. A group of my friends got together and went yesterday, and it was awesome. At this celebration, they had live bands playing songs for/about "Krishna," a giant smoke pit, and tons and tons of people that were throwing bags of colored chalk at each other. The throwing ceremonies were held every few hours, and when it was time for the ceremony, a countdown would begin, and at the end of the countdown till the throw, everyone would throw fistfulls of chalk in the air and you would be covered in chalk, as seen in my pictures. I didn't stay for an actual throw, but I got covered in plenty of chalk by lovely people that liked to decorate me as I walked by. It was really fun. It is definitely an event to attend, and yes, I will go again next year!

The Reasons Behind A Blog

My first post as a blogger. I feel like my mother. My reasons for creating a blog are simple:
1. To unclog everyone's news feeds on facebook
2. To post more about my life, including pictures
3. Keep people updated on my life while I'm away from home

Basically, I realized that I post statuses on facebook all the time about just little things that I think are funny that happen on a daily basis, or things that I find entertaining. So, this will now become the place for that. I hope you will find my life entertaining. I sure do!
